Edible Uses

Young shoots - raw or cooked. A delicious flavour. Of excellent quality, they are only slightly acrid raw, boiling them for a short time makes them suitable for salads. The shoots, which are 2 - 4cm in diameter, are harvested in the spring when they are about 8cm above the ground, cutting them about 5cm below soil level.
